WHere is an easy take on a beverage from the seasonal drinks list. It's a large-volume pre-mixed that's packed with the flavours of the festive period, which makes it perfect for a holiday party. Save the extra cordial to use in brunch beverages, desserts, or for another batch of bikinis.
Bikini
Serves 10 servings
To make the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Premix (yields 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Directions
To prepare the Citrus Syrup: Put every items into a saucepan, bring to a gentle boil, stirring to dissolve. Then, take off the heat and leave to reach room temperature fully. Transfer into an sterilised bottle, cap it and store in the fridge, it will last for about a month.
For the Batch Mix: Mix the specified liquid ingredients into a large bottle, leave to sit for an hour, then filter it best through a fine cloth, making it perfectly clear.
To serve: Add 85ml of your premix into your stirring glass containing ice, gently stirring gently for one minute to chill. Filter to a chilled martini glass or similar, garnish with the cranberries and complete it using a quick spritz of mandarin oil above the glass.
